Beans in a brownie?! Say what? Although that may seem like a foreign concept to some, it is actually really delicious! It makes a soft, fudgy texture without the need for flour or gluten. These brownies are nutritious, and so healthy that you could even eat them all and not feel guilty! Although that’s probably not advisable.

Ingredients

  • 1 can organic black beans
  • ½ cup gluten-free quick oats
  • 2 heaping scoops Cacao LivWell
  • 2 tbsp cocao powder
  • ¼ tsp Himalayan salt
  • 1/3 cup maple syrup or agave
  • ¼ cup coconut oil
  • 1 tsp organic vanilla extract
  • ½ tsp baking powder
  • ½ cup non-dairy chocolate chips

Directions

Preheat oven to 350. Grease a muffin tin or use paper muffin cups. Thoroughly rinse the beans in a strainer. Combine all ingredients in a food processer and blend really well, until smooth and batter-like. You can use a blender but a processer works best in this recipe. Add chocolate chips once finished blending. Transfer to muffin tin. Bake for 13-16 minutes. Stick a fork in them at 13 minutes to check if dough comes out and if it does, leave in a few minutes longer. Let cool for about 10-15 minutes before attempting to take out of muffin tin. Once they are cool, take them out, and enjoy! Can be kept in the fridge longer to firm up as they’ll come out pretty soft.
