- 1/2 Cup Rolled, old fashioned oatmeal (GF if needed)
- 1 tbsp maple syrup
- 1 Tbsp Coconut sugar
- 1 Cup water
- 1/4 tsp organic vanilla extract
- 1 tsp Cinnamon
- Optional: Stevia to taste
- 2 scoops Vanilla LivWell
- 1 tbsp coconut sugar
In a small pot, combine the oatmeal with the water and bring to boil over medium/high heat. Once boiling, reduce the heat to medium/low and simmer until the oats are thick, stirring frequently. (About 5 minutes) Once oatmeal is thickened, mix in the maple syrup, vanilla extract, cinnamon and stevia. Take the oatmeal off the heat and let it cool for 5 minutes. While oatmeal is cooling, make the icing.
Pour vanilla LivWell and coconut sugar into a bowl. Slowly add cold water, 1 tbsp at a time, while stirring with a spoon or fork, until desired consistency. Icing may be difficult to stir in beginning, but keep going until it is free of clumps. Once it is smooth, allow to set for 1-2 minutes before applying to oatmeal. When ready, put icing in a plastic bag and make a small cut in the corner of the bag. Apply in a swirl-like motion, like a cinnamon roll.
